I tried out a new and modified banana bread recipe this morning and It turned out so yummy I have to share it! The perfect way to ring in this cooler weather! I love fall and my babies love this bread.
1 2/3 cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon cinnamon
½ teaspoon salt
1 cup plus 2 tablespoons sugar
½ cup oil
4 bananas, very ripe, mashed
2 tablespoons vanilla yogurt (we love brown cow)
1 teaspoon vanilla extract
Set oven to 350 degrees F. Spray bottom of loaf pan with cooking spray.
Sift together the flour, baking soda, cinnamon and salt. Beat sugar and eggs with mixer until light and fluffy, about 5 minutes. Drizzle in oil. Add mashed bananas, yogurt, and vanilla. Fold in dry ingredients. Pour into the loaf pan and bake for about 45 minutes to 1 hour. Mine took 55 on the dot. Enjoy!!
